Jean Macle is known by many as the true master of Château-Chalon and his son, Laurent is trying hard to live up to his reputation. Jean Macle’s knowledge of the chemistry of Vin Jaune production is second-to-none and his Château-Chalon is amazing, year in, year out. He produces an oxidative white and a little Crémant as well as Macvin, but these pale into insignificance beside the Château-Chalon.
